Here's a quick and easy, healthy recipe that you can make in less than a minute in your Vitamix (or other high-speed blender)!
2 cups (480 ml) raw hazelnuts*
1 ripe banana
¼ cup carob powder (or cacao powder)
2 teaspoons (10 ml) vanilla powder or vanilla extract
6-8 large dates, pitted (soak in water for 15 minutes if they are not moist)
1 Tablespoon (15 ml) coconut butter or coconut oil
Combine all ingredients in Vitamix blender and run on high speed with tamper until smooth. Refrigerate or freeze leftovers.
*It is best to soak the hazelnuts for 8 hours to release the enzyme inhibitor and then dehydrate them at 110 degrees Fahrenheit for 24-48 hours or until crunchy. This is the optimum way, but they can be made with just raw hazelnuts for those who aren't ready for the soaking process.
